Returnal: Do You Have to Fight the Bosses More Than Once?
There are several boss battles in Returnal, and they can be extremely demanding. Once you've finally defeated a boss, you might not want to go through it all over again the next time. So, do you have to fight the bosses in every run?
The short answer is: no, you don't. After you beat a boss for the first time, you do not have to fight it again on subsequent runs through the game. That means you can skip past bosses and advance to the next area, speeding things up.
Can You Fight the Bosses Again?
Is it possible to go toe-to-toe with boss battles once they've been defeated the first time? Absolutely. It's entirely optional, but if you want to, you can fight the boss characters as many times as you like. To access a boss, either find the red door on the map or advance to its usual location. The bosses don't stay dead, so you can exact your revenge whenever you want.

What reward(s) do you get for beating a boss a subsequent time?
@Spacecarrot I just beat Hyperion for a second time to test this out, and got an artifact for it.
