A number of your PS2 games aren't exclusives, you know?

Also, why are SIlent Hill 3 and 4 not on your list?

Anyway, to name a few missing games...
Legend of Dragoon (PS1)
Intelligent Qube (PS1)
Spider: The Video Game (PS1)
Lunar: Silver Star Story Complete (PS1)
Lunar 2: Eternal Blue Complete (PS1)
Xenogears (PS1)
Monster Rancher 2 (PS1)
Siren (PS2)
Haunting Grounds (PS2)
Shin Megami Tensei: Nocturne (PS2)
Persona 3: FES (PS2)
Persona 5 Royal (PS4)
Odin Sphere: Leifthrasir (PS4)

Oh, and it's not exclusive (also on PC and Switch), but consider playing Ys VIII: Lacrimosa of Dana on PS4. It's quite good.

The lack of Final Fantasy and Dragon Quest is a real shame! My favourites on PS1 and PS2 are Final Fantasy VII and X but you could play any of the 6 mainlines on those consoles and enjoy them. Dragon Quest/Warrior VIII is brilliant as well on PS2. Suikoden 1 and 2 on PS1 are great JRPGs and also exclusives. Dunno if racing counts as a ‘sports game’ considering Crash Team Racing is there but Gran Turismo games are a guaranteed good time.

@DuckLord If you're planning on playing the PSone Spider-Man game, make room for its sequel, Spider-Man 2: Enter Electro. It's a solid follow-up.

Personally, I'd take out the two LEGO Star Wars games you've got listed for the PS2 and just get LEGO Star Wars: The Complete Saga on PS3. It combines both, updates the graphics and adds in levels deleted from the original releases. Having said that, there's also the forthcoming LEGO Star Wars: The Skywalker Saga on modern consoles, so maybe wait and see if it's any good.

All of the various Naruto games are essentially incremental expansion packs, so I'd also recommend trimming some of the earlier entries to avoid unnecessary repetition. Naruto: Ultimate Ninja 3 is the best of the PS2 bunch; I'd then skip ahead to Naruto Shippuden: Ultimate Ninja Storm 2 on PS3 (although it's also been remastered on PS4, so that'd be the best version).

Otherwise, well... you're gonna be quite busy for a long while, I'd say! Best of luck!

@Ralizah Damn, knew I was missing but didn't know exactly which ones and I was unsure which of these also were out for the PC and switch, though I won't be able to play on the switch seeing as I don't own one. But thanks for adding to the list. Also I think i forgot about the silent hill games lmao

@RogerRoger Yeah I was unsure with the LEGO Star Wars series but now i know, thanks! Same thing with the Naruto games, though i remember playing one or two of them on the PC and I'll ofcourse add the Spider-Man sequel.

@nessisonett Idk, Final Fantasy never really was my cup of tea but maybe I'll give it a try after all, if so then I'll check youtube on what order I should play since there are so many. I might also try Dragon Quest like you mentioned, am I wrong or isn't it Akira Toriyama who is one of the artist of the games or something along those lines. I haven't really played an JRPG before since it didn't interest me that much but maybe I'll also try Suikoden as you also mentioned and the reason for including those racing games from Jak & Dexter as well as Crash Bandicoot is simply nostalgia

@DuckLord To be honest, there really isn’t an order to play the Final Fantasy games but VII is probably the easiest to get into. Dragon Quest is indeed Toriyama and the characters all have that distinctive look. Suikoden on the other hand, you really have to play the two games in order as characters appear in both and they deliver one of the best connected plots of any series I’ve played.
