To unlock the young Kratos skin, you'll first need to beat the main campaign of the God of War Ragnarok: Valhalla. To do this, you'll need to finish the quest named The Work, Part 3: Benevolence, which involves defeating Tyr for the fourth time. Once you've done this and returned to the beach, a prompt will appear telling you about some new content you've unlocked.

While on The Shore, simply return to the glowing pillar on the left where you learned how to change Kratos' appearance, and interact with it. You should now see an option to toggle between Classic Appearance and Default Appearance using R3. Mechanically, the two skins are identical, but it's a fun little addition to the game.

Young Kratos isn't just reserved for Valhalla's roguelike mode, as once you've unlocked the skin, you can also use it in God of War Ragnarok's main campaign. However, it should be noted that it'll only be available in New Game +, so you'll need to have beaten the main storyline at least once first. The same is true of Valhalla's other additions, like the Legacy Rage Path.
