This is normally the part where on any other console I'd list a bunch of JRPGs, but the only good ones on the PS3 did rather well. So here's the others:
Armored Core V Dynasty Warriors Gundam 3 Fist of the North Star: Ken's Rage Vanquished King of Fighters XIII Not Enslaved Maybe BlazBlue: Continuum Shift Extend
IMO, this gen the good games have actually been getting the attention they deserve, while the games that slip under the radar usually deserve it. Even Tales of Graces f has been doing well from what I can see.
Shadows of the Damned - Hilarious AND creepy Vanquish - Makes Western 3rd person shooters look plodding and archaic Bayonetta - Criticly acclaimed but didn't sell as much as it deserved No More Heroes - Violent, funny and irreverent Brutal Legend - METAL
Lair, it was a great game that was savagely torn apart by lazy reviewers citing 'poor' sixaxis controls. I got it anyway, and within half an hour of playing the motion controls felt brilliant. Lair's failings actually only come from it's Rogue Leader heritage (it really is pretty much the same engine I think). Nice feeling game, decent story, great music.
PSN: KALofKRYPTON (so you can see how often I don't play anything!)

"Fate: Protects fools, little children, and ships named Enterprise." - Cmdr William T. Riker
A collection of Sega Genesis games that lives up to it's name. Classics plus some Sega Master System and Arcade titles. Plus lots of trophies and interviews. It's only like $20 now, it's worth it.
Bejeweled 3
This is a budget retail game that includes the downloadable games Bejeweled 3, Feeding Frenzy 2 and Zuma in one disc. It's $20 so if you don't want to download every game and save $5 this games worth it.
It's kind of old now but I'd say Heavenly Sword. It was one of the best exclusive PS3 games in the console's early days and it still holds up well today. It's short but damn fun.
Bayonetta - Criticly acclaimed but didn't sell as much as it deserved
It sold over a million copies, how much more did it deserve?
You ask this in a gaming business culture where Nintendo felt over TWO million for Wii Music was still a "failure." For the amount of hype Bayonetta got (and likely what it cost to make), it really didn't get enough sales. That said, I didn't like the demo (and am not fond of that type of game in general, really), so I don't much care that it did relatively poorly.
As for game recommendations...3D Dot Game Heroes. One of the best PS3 games there are, and truly a must-play IMO. Even better, it's surprisingly easy to find cheap for a relatively old Atlus game!

Another game I forgot to recommend: Majin and the Forsaken Kingdom. It's a fun action-adventure title with AI co-op. It has the best AI pathfinding for your co-op partner I have ever seen in a video game. You can stand anywhere and call the guy to come to you, and he'll pretty much always find the best path no matter how complex.
