Considering the review scores of each game I'm pretty stoked to be able to play them both (when I can tear myself away from Skyrim that is). Must/Should I start with 1 and 2 in both series to fully appreciate both #3's?

The story in Killzone 3 is pretty bad anyway, and Resistance 3 is quite self-contained from what I have heard.

Resistance 3 can definitely be played on its own for the interaction between characters, though the story of whats happening to the planet could be lost on you. I would recommend playing resistance 1+2, though Killzone could be skipped.
