For me, it was probably Persona 4. While it didn't particularly show off any of the Vita's features, it was one of my favorite games of all time that I would have otherwise missed out on.
Soul Sacrifice Delta is easily a close second.

Lumines Electronic Symphony. I'll have the basketball or hockey game on in the background while playing this game. It's a perfect combination.

My game library ranges from Mario Kart to Call of Duty to Tales of Xillia to Diablo 3 to Forza. To me gaming is about having fun - not blindly supporting only one company while thumbing your nose at "the evil other systems."
Sound Shapes. For me it's still the best game on the Vita (where it's the best fit) and PS4 as, simply, it's more fun than most games for each console combined.

Earth Defense Force 2017 Portable. The best entry in the series & much improved over the Xbox 360 version its based on. After playing 2017 Portable on Vita & EDF Portable 2 on PsP, you'd be surprised just how much of a perfect fit the series is for playing on the go. Other than that - Wipeout 2048. It was the last Wipeout from Studio Liverpool before they were closed - and probably the best in the series as well.
